The process to change (or set) your email signature on an Android 4 Samsung Galaxy S3 S4 or S5 is quite easy:

1. Open your email
2. Click the MENU button (hidden button to the left of the physical HOME bar below the screen)
3. Click SETTINGS
4. Click on your account name
5. Click SIGNATURE
6. Start typing!
