The problem was that The process to reset Lenovo Smart Display 7 was not nearly as obvious as you might think.
You would expect a factory reset option to be in the settings but it would but it was not. In fact you have to hold down the two volume buttons at the top of the Lenovo Smart display 7 to start the factory reset process.
